1. Wazwan (The Royal Feast)

Wazwan is a multi-course meal (traditionally 36 courses) prepared by special chefs called Wazas . It is the pride of Kashmiri Muslim culture.

  • Rist (Rista): Soft, spongy meatballs in vivid red gravy.
  • Rogan Josh: Lamb cooked with Kashmiri red chilies and yogurt.
  • Gushtaba: The "King of Dishes" - velvety meatball in white yogurt gravy, served at the end.
  • Tabak Maaz: Fried lamb ribs that are crispy on the outside and soft inside.

2. Street Food (Tujji & More)

Kashmir's street food culture is vibrant, especially in the evenings around Dal Lake.

  • Tujji (Barbeque): Marinated mutton or beef skewers grilled over coals. Served with distinct chutneys and traditional bread (Lavasa).
  • Nader Monje: Lotus stem fritters fried in batter. A rainy day favorite.
